I adoooore pecan squares, it’s like a tiny pecan pie in one bite!
Prep time: 45 min (or overnight) | Bake time: 12 min | Total: 57 min
Ingredients:
Crust:
- 3 cups flour
- 1 tsp baking powder
- ½ tsp salt
- 10 Tbsp unsalted butter, softened
- 6 Tbsp vegetable shortening
- ¾ cup sugar
- 2 lg eggs
- ½ tsp vanilla extract
Topping:
- ½ lb (2 sticks) unsalted butter
- ½ cup honey
- ¼ cup sugar
- 1 ¼ cups light brown sugar
- ¼ cup heavy cream
- 4 cups pecans, chopped
Directions:
- For curst: combine flour, baking powder, & salt in a bowl; mix well.
- Beat butter & shortening together with electric mixer on medium until smooth
- Gradually add sugar and beat until light & fluffy
- Beat in eggs & vanilla
- Reduce speed, add flour mixture until just combined
- Gather into a ball, then flatten slightly
- Using fingers, press into a buttered nonstick baking sheet about 10″ x 15″ x ¾” (jelly roll pan)
- Refrigerate overnight or place in freezer until firm, approx.. 30 min.
- Preheat over to 375° F
- Prick crust all over & bake until golden – approx. 12 min. & set aside to cool
- For topping: combine butter, honey, & white & brown sugars in a saucepan
- Simmer, stirring occasionally, over medium heat until sugars melt & mixture darkens & foams (5 min.)
- Remove from heat & whisk in cream & pecans
- Spread filling evenly over crust with a rubber spatula
- Bake until topping is bubbly (approx. 15 min.)
- Remove from oven & cool completely
- Cut into 1 ½” squares
