For those of you who don’t know what Lekvar is, read about it here or find it here. Once you have your prune butter we can get on with the recipe.
Ingredients:
Cookie:
- ½ cup butter
- ½ cup margarine
- 1 cup & 2 Tbsp sugar
- 4 eggs, separated (need both whites & yokes)
- 1 tsp vanilla
- 2 cups all-purpose flour, sifted
- 1 Tbsp. baking powder
- ¼ cup salt (optional)
Filling:
- 1 ½ Lekvar
Meringue:
- 4 egg whites
- 1 cup sugar
- ½ cup walnuts, chopped
- 12″ x 15″ baking pan
Directions:
- Preheat oven to 350° F
- Cream butter & margarine
- Add 2 Tbsp sugar & egg yokes; beat until smooth
- Add vanilla
- Sift together flour, baking powder, & salt; add to mixture
- Spread by hand into cookie pan.
- Cover with Lekvar
- Meringue: Combine egg whites & 1 cup sugar; beat until forms stiff peaks
- Spread meringue over Lekvar
- Cover in chopped walnuts
- Bake for approx. 20 min
