Roasted Orange Chicken and Glazed Vegetables

Time: 30 min

Ingredients:

  • 2 navel oranges, sliced
  • 4 medium carrots, peeled and cut into 1″ pieced
  • 3 small parsnips, pealed and cut into 1″ pieces
  • 6 oz boneless, skinless chicken breast
  • 2 TBSP EVOO
  • 2 tsp ground coriander
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp Dijon mustard
  • 2 cups mixed salad greens
  • 1 TBSP honey
  • 1 TBSP chopped tarragon

Directions:

  1. Preheat oven to 425°
  2. Place 1 ½ oranges, carrots, parsnips, and chicken on rimmed baking sheet
  3. Drizzle with 1 TBSP EVOO and toss to coat
  4. Rub chicken with coriander
  5. Arrange chicken in a single layer surrounded by oranges and vegetables
  6. Season with salt & pepper
  7. Roast approx. 25 min, until chicken is cooked through and veggies are tender
  8. Meanwhile, juice remaining orange ½ into large bowl
  9. Whisk with oil, mustard, salt, and pepper
  10. Add greens and toss to coat
  11. Transfer chicken to cutting board
  12. Drizzle honey over veggies and sprinkle with tarragon, stir
  13. Slice chicken breast & serve with salad and vegetables
