Nicole’s Meatloaf

Loosely based on Alton Brown’s “Good Eats Meatloaf”, this recipe is sure to please the crowd.

Prep time: 20 min | Cook time: 45 min. | Total: 1 hour 5 min.


  • 1½ lb meatloaf mix (ground beef, veal, pork)
  • ½ cup carrot, finely chopped
  • ½ cup green bell pepper, finely chopped
  • ½ cup onion, finely chopped
  • ½ cup garlic bread crumbs
  • 1 large egg
  • 1 tsp dried parsley
  • 2 tsp sea salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper
  • ½ tsp ground mustard
  • 1 tsp chili powder
  • 2 tsp Worcestershire sauce

For glaze:

  • ½ cup ketchup
  • 1 TBSP honey
  • 1 tsp cumin
  • dash Worcestershire sauce
  • dash hot pepper sauce


  1. Preheat oven to 350º F
  2. Combine meat, carrot, pepper, onion, egg, and bread crumbs; season mixture with parsley, salt, pepper, cayenne pepper, mustard, and chili powder; add Worcestershire sauce; Mix thoroughly until well combined
  3. Shape into loaf and bake for 45 min.
  4. Mix glaze ingredients in small bowl and apply glaze with a brush to meatloaf after it’s been cooking for 10 min.
