To follow up from last week’s post on the BEST RED VELVET CAKE, I figured I’d post another favorite dessert of mine, the classic carrot cake. I tend to experiment every time I make it, but one of the best recipes I’ve found online is this one from Live Well Bake Often. There’s a trend here with the cream cheese icing–I can’t get enough of it! What’s better than the sweetness of icing with a hint of cheesy-ness? I typically make this into cupcakes rather than serving it as a cake, and it wouldn’t be complete without drawing a cute little icing carrot on top! Delish!
