I made these for a small get-together a few weeks ago and I’ve been craving them again. They came out so good and were so easy in the air fryer.
Ingredients
- 6 jalapenos
- 1 TBSP cooking oil of choice, I prefer coconut oil or butter for keto
- ½ cup onion, finely chopped
- 3 cloves garlic, finely chopped
- ½ lb ground beef
- dash of black pepper, freshly ground
- 3 ounces cream cheese, softened
- ½ cup crumbled gorgonzola (or blue cheese)
- ½ cup shredded cheddar
- 6 slices bacon
Instructions
- Preheat oven to 400° F
- Slice jalapenos in half lengthwise and scrape out the seeds and membranes; discard insides and set cut peppers aside
- On a lined baking sheet, partially cook the bacon for about 8 minutes, then place on paper towel to absorb the grease and set aside
- Meanwhile, preheat the air fryer to 400° F for a few minutes, then air fry empty jalapenos for about 5 minutes, or until edges start to brown, remove and set aside
- Heat saucepan on medium heat and saute onions and garlic in oil or butter until fragrant, add beef, season with black pepper, and cook until browned
- Turn off the heat but keeping the pan on the stove, mix cream cheese and gorgonzola into the beef
- Spoon the beef and cheese mixture evenly into the jalapenos, top with shredded cheddar, and wrap with bacon
- Air fry for about 7 minutes, until bacon is fully cooked and slightly crispy
Note: I’m sure you could bake them in the oven, probably for a similar amount of time–I just love my air fryer 🙂
