Keto Cheesy Bacon-Wrapped Beef Jalapeno Poppers

bacon beef jalapeno poppers

I made these for a small get-together a few weeks ago and I’ve been craving them again.  They came out so good and were so easy in the air fryer.

Ingredients

  • 6 jalapenos
  • 1 TBSP cooking oil of choice, I prefer coconut oil or butter for keto
  • ½ cup onion, finely chopped
  • 3 cloves garlic, finely chopped
  • ½ lb ground beef
  • dash of black pepper, freshly ground
  • 3 ounces cream cheese, softened
  • ½ cup crumbled gorgonzola (or blue cheese)
  • ½ cup shredded cheddar
  • 6 slices bacon

Instructions

  1. Preheat oven to 400° F
  2. Slice jalapenos in half lengthwise and scrape out the seeds and membranes; discard insides and set cut peppers aside
  3. On a lined baking sheet, partially cook the bacon for about 8 minutes, then place on paper towel to absorb the grease and set aside
  4. Meanwhile, preheat the air fryer to 400° F for a few minutes, then air fry empty jalapenos for about 5 minutes, or until edges start to brown, remove and set aside
  5. Heat saucepan on medium heat and saute onions and garlic in oil or butter until fragrant, add beef, season with black pepper, and cook until browned
  6. Turn off the heat but keeping the pan on the stove, mix cream cheese and gorgonzola into the beef
  7. Spoon the beef and cheese mixture evenly into the jalapenos, top with shredded cheddar, and wrap with bacon
  8. Air fry for about 7 minutes, until bacon is fully cooked and slightly crispy

Note: I’m sure you could bake them in the oven, probably for a similar amount of time–I just love my air fryer 🙂
